We have a client in Belgium who delivers daily to wholesalers large quantities of pitta bread, tortillas and corn, mushrooms, olives and pickles for the snack market. He wants to start delivering also steamed and breaded chicken parts like legs, drumsticks, drumettes and wings. The formula should be like the chicken parts sold in Kentucky Fried Chicken (KFC)
That means that the chicken parts should be steamed and breaded with a mix of breadcrumbs and spices. After that they should be deep frozen IQF. Packing should be in sacks of 2 or 3 kg. 4 or 6 bags in a carton.
